Community Supported Agriculture- it’s that time again!

For the second summer in a row, we are getting our CSA veggie box and it’s pretty awesome. It is like getting a big package once a week. This first week we got yellow squash, zucchini, corn, black  berries, blueberries, new potatoes and rutabagas. We have already cooked some of everything but the rutabagas (and I’m sending those home with my Moma to take to my grandmother!).

I have been tearing up Pinterest looking for good summer veggie recipes. And Moma promised she would help me make some pepper jelly to have this fall and winter. I just love all the fresh veggies you can get in the summertime. Summertime tomatoes are right around the corner and that makes me super excited. Nothing like a tomato and mayo sandwich!

Our goal this summer is not to waste any of the veggies in the CSA box. I want to freeze what we don’t eat so we can enjoy it later when the boxes stop rolling in.

I already have a couple Pinterest Experiments to share with you- roasted squash and zucchini being first- and you won’t believe  what we grilled last week that turned out pretty awesome! Let’s just say it starts with chocolate chip and ends in pound cake!!

Do you participate in CSA or buy veggies at a farmer’s market or a fruit stand? What is your favorite summer vegetable?

All the Best, Coralie
