Southwestern Shepherd's Pie- a Pinterest Treasure!

Ingredients
  • 1 med onion
  • 1 small green bell pepper
  • 1 Tbsp garlic
  • 1 lb ground meat
  • 1 Tbsp tomato paste
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • ½ tsp cinnamon
  • salt and pepper to taste
  • 2 cups tomato chopped (I used a can of diced tomatoes)
  • ½ cup cooked corn (I used a whole can)
  • ½ cup black beans (I used a whole can)
  • ¼ cup chopped cilantro
  • 1½ lb sweet potatoes (I used 3 med-large)
  • 2 Tbsp butter
  • ½ cup milk
Instructions
  1. Cook and puree sweet potatoes.
  2. Heat oil in large pot over medium heat. Add onion and bell pepper, cook until onion is translucent. Add garlic, jalapeno and meat and cook 5 minutes.
  3. Add tomato paste, spices and tomatoes until liquid reduces (about 15 minutes). Add corn and black beans and 4 tbsp. of cilantro and spread in a 9x13 Pyrex
  4. Mix ½ cup of milk and 2 Tbsp of butter with pureed sweet potatoes and spread over meat mixture.
  5. Bake on 400F for 20-30 minutes until brown. Garnish with remaining cilantro.
