Clean Chicken Cacciatore

Ingredients
  

  • 4-6 pieces bone-in chicken
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/2 cup all-purpose whole wheat (or almond) flour for dredging
  • 2-3 tbsp olive oil
  • 1 red bell pepper diced
  • 3 garlic cloves
  • 3/4 cup white wine
  • 1 can 28-oz diced tomatoes with juice
  • 3/4 cup reduced-sodium chicken broth
  • 3 tbsp drained capers

Instructions
 

  • Add olive oil to large pan over medium-high heat. Sprinkle chicken with salt and pepper and dredge in flour and place into pan.
  • After the chicken is just brown, remove it from pan and set it aside.
  • Dice onion, red bell pepper, garlic, and add to pan where the chicken was cooked. Cook over medium heat until the onions are tender.
  • Add wine and let cook until reduced by half.
  • Add tomatoes with juice, plus broth, capers, and parsley. Return chicken to sauce and allow to simmer for 20-30 mins until chicken is fully cooked.
