Clean Chicken Cacciatore

Ingredients
  

  • 4-6 pieces bone-in chicken
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/2 cup all-purpose whole wheat (or almond) flour for dredging
  • 2-3 tbsp olive oil
  • 1 red bell pepper diced
  • 3 garlic cloves
  • 3/4 cup white wine
  • 1 can 28-oz diced tomatoes with juice
  • 3/4 cup reduced-sodium chicken broth
  • 3 tbsp drained capers

Method
 

  1. Add olive oil to large pan over medium-high heat. Sprinkle chicken with salt and pepper and dredge in flour and place into pan.
  2. After the chicken is just brown, remove it from pan and set it aside.
  3. Dice onion, red bell pepper, garlic, and add to pan where the chicken was cooked. Cook over medium heat until the onions are tender.
  4. Add wine and let cook until reduced by half.
  5. Add tomatoes with juice, plus broth, capers, and parsley. Return chicken to sauce and allow to simmer for 20-30 mins until chicken is fully cooked.
