Enchiladas! Enchiladas! Enchiladas!

Ingredients
  

  • 2 cups shredded chicken
  • 1 cup cream of chicken soup
  • 1 can diced chilies
  • 1/2 cup mozzarella
  • 3/4 tsp cumin
  • 1/2 cup chopped onion
  • 1 can enchilada sauce
  • 6 whole wheat tortillas
  • salt and pepper to taste

Instructions
 

  • Combine first six ingredients.
  • Spread 1/4 cup of enchiladas sauce on the bottom of a 9x13 Pyrex.
  • Stuff tortilla with 1/2 cup of chicken mixture, roll up, and place seam side down in Pyrex.
  • Cover rolled tortillas with remaining enchilada sauce.
  • Cook at 350F for 30 minutes.
