Southwestern Shepherd's Pie

Ingredients
  

  • 1 medium onion
  • 1 small green bell pepper
  • 1 tbsp garlic
  • 1 lb ground meat
  • 1 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • salt and pepper to taste
  • 2 cans of chopped tomatoes I used a can of diced
  • 1/2 cup cooked corn I used the whole can
  • 1/2 cup black beans I used the whole can
  • 1/4 cup cilantro chopped
  • 1 1/2 lbs sweet potatoes I used 3 medium-large
  • 2 tbsp butter
  • 1/2 cup milk

Instructions
 

  • Cook and puree sweet potatoes.
  • Heat oil in large pot over medium heat. Add onion and bell pepper and cook until onion is translucent. Add garlic, jalapeƱo, and meat and cook 5 minutes.
  • Add tomato paste, spices, and tomatoes until liquid reduces (about 15 minutes). Add corn and black beans and 4 tbsps of cilantro and spread in a 9X13 Pyrex.
  • Mix 1/2 cup of milk and 2 tbsps of butter with pureed sweet potatoes and spread over meat mixture.
  • Bake on 400F for 20-30 minutes until brown. Garnish with remaining cilantro.
