Southwestern Shepherd's Pie

Ingredients
  

  • 1 medium onion
  • 1 small green bell pepper
  • 1 tbsp garlic
  • 1 lb ground meat
  • 1 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • salt and pepper to taste
  • 2 cans of chopped tomatoes I used a can of diced
  • 1/2 cup cooked corn I used the whole can
  • 1/2 cup black beans I used the whole can
  • 1/4 cup cilantro chopped
  • 1 1/2 lbs sweet potatoes I used 3 medium-large
  • 2 tbsp butter
  • 1/2 cup milk

Method
 

  1. Cook and puree sweet potatoes.
  2. Heat oil in large pot over medium heat. Add onion and bell pepper and cook until onion is translucent. Add garlic, jalapeƱo, and meat and cook 5 minutes.
  3. Add tomato paste, spices, and tomatoes until liquid reduces (about 15 minutes). Add corn and black beans and 4 tbsps of cilantro and spread in a 9X13 Pyrex.
  4. Mix 1/2 cup of milk and 2 tbsps of butter with pureed sweet potatoes and spread over meat mixture.
  5. Bake on 400F for 20-30 minutes until brown. Garnish with remaining cilantro.
