Taco-Stuffed Sweet Potatoes

Ingredients
  

  • 4-5 sweet potatoes
  • 1 lb ground meat
  • Taco Seasonings
  • Salsa I used Newmans Own Pineapple Salsa
  • Sour Cream
  • Grated Cheese optional

Method
 

  1. Bake sweet potatoes on 400F for 45-60 mins, until able to squeeze.
  2. Brown ground meat and drain.
  3. Add meat, plus taco seasonings and 1/2-3/4 cup water and bring to a boil, more of a fast simmer.
  4. Add meat to sweet potato and top with salsa, sour cream, and cheese to taste.
