Dice and saute some onion and bell pepper.
Brown the ground beef. Drain.
Add favorite spaghetti sauce from jar or homemade, let simmer.
Peel zucchini into thin strips using a potato peeler. Parboil them.
Mix together 12-16 oz of cottage cheese, egg, and 2 tbsp of Italian seasoning.
Grease 9x13 Pyrex and spread a layer of the meat sauce on the bottom and then a layer of the parboiled zucchini, then a layer of cottage cheese mixture. Repeat layers until all is used.
Cover and bake at 350 F for 45 minutes. Uncover and sprinkle another cup of mozzerella cheese.
Stick back in the oven for 5-10 mins until cheese is melted.
