Zucchini Lasagna

Ingredients
  

  • 1 pound ground beef 93/7
  • onion
  • bell pepper
  • olive oil
  • 1 jar spaghetti sauce
  • 2 zucchini
  • 12-16 oz cottage cheese
  • 1 egg
  • 2 tbsp Italian seasoning
  • 1 cup shredded cheese

Method
 

  1. Dice and saute some onion and bell pepper.
  2. Brown the ground beef. Drain.
  3. Add favorite spaghetti sauce from jar or homemade, let simmer.
  4. Peel zucchini into thin strips using a potato peeler. Parboil them.
  5. Mix together 12-16 oz of cottage cheese, egg, and 2 tbsp of Italian seasoning.
  6. Grease 9x13 Pyrex and spread a layer of the meat sauce on the bottom and then a layer of the parboiled zucchini, then a layer of cottage cheese mixture. Repeat layers until all is used.
  7. Cover and bake at 350 F for 45 minutes. Uncover and sprinkle another cup of mozzerella cheese.
  8. Stick back in the oven for 5-10 mins until cheese is melted.
