Zucchini Lasagna

Ingredients
  

  • 1 pound ground beef 93/7
  • onion
  • bell pepper
  • olive oil
  • 1 jar spaghetti sauce
  • 2 zucchini
  • 12-16 oz cottage cheese
  • 1 egg
  • 2 tbsp Italian seasoning
  • 1 cup shredded cheese

Instructions
 

  • Dice and saute some onion and bell pepper.
  • Brown the ground beef. Drain.
  • Add favorite spaghetti sauce from jar or homemade, let simmer.
  • Peel zucchini into thin strips using a potato peeler. Parboil them.
  • Mix together 12-16 oz of cottage cheese, egg, and 2 tbsp of Italian seasoning.
  • Grease 9x13 Pyrex and spread a layer of the meat sauce on the bottom and then a layer of the parboiled zucchini, then a layer of cottage cheese mixture. Repeat layers until all is used.
  • Cover and bake at 350 F for 45 minutes. Uncover and sprinkle another cup of mozzerella cheese.
  • Stick back in the oven for 5-10 mins until cheese is melted.
