Clean Bacon and Ranch Crockpot Chicken
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp ranch seasoning
- 2 tsp minced garlic
- 2 tbsp real bacon bits
- 1 cup plain Greek yogurt
- 1 1/2 cup cream of chicken soup
Instructions
- Place chicken in crockpot and mix all ingredients and pour over chicken.
- Cook in crockpot according to your timeline (6-8 hours).
- Shred chicken in crockpot and serve over quinoa.
So. Who doesn’t love cooking with their crockpot? I mean, it is the ultimate set it and forget it. I am always on the lookout for good crockpot recipes. But, here’s the catch- I am looking for crockpot recipes that are not gonna stop our healthy eating in its tracks. I am learning that you can really whip up some tasty and healthy crockpot meals that will absolutely knock your socks off!
Also- as you know I have committed to menu planning for the year which leads to cooking at home and not eating out so much which leads to saving money. Here comes another catch. During the work week (for us Friday- Tuesday) cooking at home is much easier. And even during the off-season, cooking at home on our weekend has become our routine as well. However, now that Spring is starting and we are starting to spend most of our off days out and about, it is very tempting to just eat out- and there goes any semblance of saving money. Enter my trusty crockpot. If we can just set it and forget it before we leave the house- then, when we get home- dinner will be ready.
My friend, Jeanie, gave me a whole slew of crockpot recipes when she gave me the chicken patties recipe but the one that struck me as the one that needed to be tested first was the bacon and ranch chicken. The recipe looked very simple and very easy to clean up. The first step in cleaning it up was to make homemade ranch seasoning. Ok, check. The second was to whip up some cream of chicken soup. Ok, check-check. The final step in cleaning up this recipe was to swap out the sour cream for plain Greek Yogurt and the rest of the prep literally took about 5 minutes.
So, you mix up ranch seasoning, cream of chicken soup, Greek yogurt with some minced garlic and real bacon bits. You pour this over 4 boneless, skinless chicken breasts in your crockpot and let it cook (for hours).
The recipe that Jeanie gave me instructed to cook some egg noodles and add them to the crockpot and mix it all together right before you’re ready to eat. You’re never going to believe what I subbed for the egg noodles… Quinoa! Yep. And it was super delicious!
I am not going to lie, when I pulled the lid off the crockpot, I thought- oh goodness, this does not look awesomely wonderful but it smelled awesomely wonderful and then I tasted it. At that point, it instantly did not matter what it looked like because it tasted wonderful!
