Crock Pot BBQ Pork Burritos
Ingredients
- Choice of meat pork chops, pork tenderloin, chicken, etc.
- 1/4 cup dried, minced onion
- 1 cup BBQ sauce of choice
- 1 can cranberry sauce
- whole wheat tortillas
- pineapple salsa
- plain greek yogurt
- grated mozzerella cheese
Instructions
- Combine the first four ingredients in your crockpot and let cook.
- When ready to make burritos, place meat and last three ingredients on a whole wheat tortilla. Roll up and enjoy.
- Keep refrigerated until ready to eat. Freezes beautifully.
Dear Reader, do you recall that Bub and I both work in a restaurant? I love a dive roadside joint just as much as the next girl, maybe more, but the restaurant that Bub and I work in is definitely not that kind of place. It is really awesome. If you are ever in our neck of the woods, you need to put Cobalt on your dining-out itinerary- like, for sure.
As a manager at Cobalt, Bub often works 12-hour shifts. And as a perk of being a manager, Bub gets one meal a day on the house. But, 12 hours is a long stretch to only eat once so, Bub packs a second meal almost every day. And my shifts are generally from about 3PM- midnight or so. And, this hungry girl packs a lunch too. Otherwise, I would be gnawing my fingers by the end of my shift.
Lots of times we just take a samich, yes, samich- much like a sandwich, only better. I generally take a smorgasbord of snacks which may or may not include any number of fruits, nuts, jerky, etc. However, I have come to a point where I am tired of samiches so, I have been looking for alternatives— which brings me to burritos.
My friend, Jeanie gave me a bunch of tasty crockpot recipes, including the bacon-ranch-chicken recipe. Another that she gave me was one for a BBQ chicken whipped up in the crock pot. I changed it only in that I made it with Pork rather than chicken and it turned out great!
I placed a package of boneless pork chops and a pork tenderloin in the bottom of the crock pot and added a 1/4 cup of dried minced onions, 1 cup of BBQ sauce, and a can of cranberry sauce and mixed it all together and let the crock pot work its magic.
Now, this was some good business. It would certainly hold its own as the centerpiece of a meal and leftovers but, I had other plans for this BBQ pork! I wanted this as the centerpiece for our lunches.
On whole wheat tortillas, I put the pork plus some pineapple salsa (yes, regular salsa will work) plus a little plain Greek yogurt and a sprinkling of mozzarella cheese. I rolled it up and BAM! ready for lunch and healthy to boot!
